Lemon Shortbread Cookies
These lemony delights were made by Jaki Fraser and you can have a taste at the Lawrencetown Library.
Ingredients:
Butter 1cup
Sugar ¾ cup
Grated lemon zest 2 tsp
All purpose flour 2 -1/4 cups
Egg white, beat with a fork
Yellow sanding (coarse) sugar
Cream Butter and sugar in large bowl, add lemon zest. Beat well.
Add flour in two additions, mixing well after each addition.
Roll dough into a 3 inch diameter log. Brush with egg white and sprinkle with sanding sugar evenly over top of wax paper. Wrap log with plastic wrap and chill for at least six hours or overnight. Remove wrap and slice into ¼ inch slices. Cut each slice in half. Place on ungreased cookie sheet. Bake in 325 degree oven 8 to 10 minutes. Cool 5 minutes before removing .
Easy cookie to make, I added 1 tbsp lemon juice for a more lemony flavor.
